Chocolate zucchini cake recipe
Chocolate Zucchini Cake
4 eggs
1 cup oil
2 cups sugar
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
4 tablespoons cocoa
1 teaspoon vanilla
2 cups grated zucchini
1/2 cup nuts, chopped
Beat eggs, oil and sugar for two minutes. Add dry ingredients, spices, vanilla, zucchini and nuts. Pour into two nine-inch round lined cake pans. Bake at 350 degrees for 40-45 minutes. Frost with Chocolate Frosting.
For frosting, cook 1/2 cup margarine, 4 tablespoons cocoa and 6 tablespoons milk until they boil, about five minutes. Remove from heat. Beat in 3 1/2 cups powdered sugar and 1 teaspoon vanilla.
